A typical De. Co. cake from Romagnese: a simple and delicious dessert.

The “Sabiòsa” cake (specifically written with only one b) is nowadays a contender in terms of popularity to the Vigoni and Paradiso cakes, typical products from Pavia. This sweet has returned to Romagnese thanks to Mrs. Maria Diamanti who has learned the precious recipe she has treasured while she was employed by a gentleman from Turin between the two world wars. 

She returned from the chief town of Piedmont back to the Alta Val Tidone with an extraordinary recipe, a formula which has been enriched in time, refining it to the point of making it worthy of the Municipal Denomination of Origin De. Co.

In order to better enjoy its sweetness, you can pair the Sabiòsa cake with a Moscato wine from Oltrepò Pavese, served at a temperature of 6-8 °C.
